Homemade Bounty Bites Recipe (Healthy Coconut Treats)

Craving something sweet? If like me you love anything coconutty – sweet or savoury – these Chocolate Bounty Bites will hit the spot.

Think of them as homemade Bounty chocolate but better – because you get to choose what goes in and what kind of chocolate you coat them in. They’re naturally sweetened, melt-in-the-mouth delicious, and so easy to put together.

Ingredients:

150g dessicated coconut

200g (1 block) creamed coconut, melted

6 tablespoons coconut oil, melted

3 tablespoons maple syrup

1 bar (approx. 90-100g) dark chocolate

Montezuma Giant 60% Dark Chocolate Buttons

Method:

1. In a bowl, mix the dessicated coconut, creamed coconut, coconut oil and maple syrup until fully combined.

2. Shape the mixture into small balls or press it evenly onto a lined baking sheet. Place in the freezer for about 30 minutes.

3. While the mixture chills, melt the chocolate. Break the bar into pieces and place it in a glass bowl over a pan of hot water (bain marie method). Stir until smooth then remove from the heat.

4. Take the coconut mixture from the freezer. If shaped into balls, dip each one into the melted chocolate and place on a lined tray to set. If the coconut mixture was pressed onto the baking sheet, slice into bars and dip each one into the melted chocolate before placing on a lined tray to set.

5. Chill in the refrigerator for around 30 minutes and then enjoy!


These treats store well in the freezer and taste even better the next day.
