Hot Chocolate Granola (Easy Winter Breakfast Recipe)

It’s both soft and soothing for the gut with oats, but crunchy and spiced, making it a textured treat.

Ingredients:
1.5 cups oats
1 cup puffed rice
¼ cup desiccated coconut
¼ cup cacao powder
1 teaspoon cinnamon powder
Pinch of powdered ginger
2 green cardamom pods (seeds only, crushed)
Pinch of powdered vanilla
1.5 tablespoon coconut oil, melted
1/3 cup maple syrup
Handful of roasted nuts – hazelnuts or blanched almonds work well
Handful of dried fruit – sultanas or chopped dried dates
Method:
1. Set aside the nuts and dried fruit.
2. In a large mixing bowl, combine the oats, puffed rice, coconut, cacao, cinnamon, ginger, cardamom, and vanilla.
3. In a separate small bowl, whisk together the melted coconut oil and maple syrup until combined.
4. Pour the liquid mixture over the dry ingredients and stir until everything is well-coated.
5. Spread the mixtures onto a parchment-lined baking tray.
6. Bake in a fan-assisted oven at 160c for 10 minutes.
7. Remove from the oven and let it set for around 15 minutes – it will crisp up as it cools.
8. Break up the granola into clusters and stir through the roasted nuts and dried fruit.
9. Store in an airtight container for up to a week.
