Cosy Hug Me Cookies Recipe

These cookies feel just like a warm hug, perfect for cool Autumn days.

Ingredients:

Makes: 8 cookies

1 cup jumbo oats

2 tablespoons oat flour

1 cup desiccated coconut

1/8 teaspoon vanilla powder 

1/8 teaspoon ginger powder 

3 green cardamom pods, seeds crushed

1/4 cup slivered almonds

1/4 cup raisins soaked in water overnight

1/2 cup nut or seed butter (I used tahini)

1/3 cup coconut sugar

3 tablespoons ghee

2 tablespoon molasses

1 flax egg (1 tablespoon ground flax seeds with 2.5 tablespoons water)

Method:

  1. In a small bowl mix the flax seeds with the water and set aside for 10-15 minutes.

  2. Mix oats, oat flour, desiccated coconut, spices, almonds and raisins in bowl and set aside.

  3. In a steel saucepan, gently melt together the nut or seed butter, sugar, ghee and molasses until combined.

  4. Pour the mixture over the dry ingredients and mix until everything is coated.

  5. Stir through the flax egg until incorporated.

  6. Using your hands, form around 8 balls out of the mixture. The mixture can get sticky but keeping the palms wet with water helps.

  7. Flatten each ball slightly into a cookie shape on a parchment-lined baking tray.

  8. Bake at 160c for 12 minutes.

  9. Remove from oven and allow to cool slightly before transferring to wire rack to cool completely.

Will keep in an airtight container for one week.
